Another Use for the Orange Blossom Honey

After making the delicious Orange Cake this weekend, I was inspired to try the Orange Blossom Honey in something else. I promised Adrian we would have pancakes at some point this week (he LOVES pancakes--well, he actually loves the syrup that you get to have with pancakes and in reality, he prefers having waffles as his excuse to eat syrup but since we don't have a waffle iron, he has to settle for pancakes) and so I decided to try out the honey in a whole wheat pancake recipe I found last week.

In the year since we've started our healthier lifestyle, we've tried lots of different pancake recipes, some of which have been not-so-top-notch. When I found this recipe online that incorporated lots of different ingredients we like, I just had to try it (with a few adaptations). This recipe is great for many reasons. First of all, it's made with whole wheat flour. Substituting whole wheat flour for all-purpose flour is an easy way to boost the health benefits of your foods. Second, because of the applesauce, they are fluffy and perfect. Third, the pancakes contain bananas, which are filling and really great for your health. Although I am not really a fan of bananas by themselves, I know they are really good for your health so I felt great sneaking them into a food that I really like. (I almost hate to admit it, but I actually rather enjoyed the taste of the banana in the pancakes). I even spruced it up a bit more by slicing the second half of the banana onto the tops of our pancakes. Again, even though I don't really like bananas, having the little slices with each bite of my pancake actually made them easily edible and allowed me to incorporate a super healthy fruit into my diet. Instead of using the sugar that the recipe called for, I took that as an opportunity to try out my Orange Blossom Honey. These honey whole wheat banana pancakes were so delicious I'm going to make them again tomorrow :)

Honey Whole Wheat Pancakes
Recipe Adapted from nofearentertaining.blogspot.com

INGREDIENTS
1 cup whole wheat flour
1 tbsp Orange Blossom Honey
1 tbsp baking powder
1/2 tsp salt
1 egg
a little less than 1 cup milk
2 tbsp unsweetened apple sauce
1/2 mashed banana

DIRECTIONS
Mix all the dry ingredients together in a large bowl.
In a smaller bowl mix the honey, banana, applesauce, milk and egg.
Add wet ingredients to the dry and stir until just moist.
Cook on an electric griddle or fry pan.
Top pancakes with sliced bananas and enjoy!

  1. All of these recipe tips in the midst of finals. Even the fact that you're cooking something other than microwaving take-out in the midst of finals amazes me. You are a goddess. Also, I want to hear Adrian says "syrup." :)

  2. Honey is a delicious additive to a food, especially raw orange blossom honey because of its citrus feel. Bananas on the other side, is also delicious, but I prefer them on top of pancakes than being cooked with the pancake batter.
